How to Filet a Trout
Cocktail Sauce
In bowl, stir together 1 cup ketchup, 1-2 Tbs. Freshly grated or prepared horseradish, 1 Tbs. fresh lemon juice, 1/2 Tsp Tabasco sauce, 1/4 Tsp. Worcestershire sauce and 1/4 Tsp. celery salt. Cover and refrigerate cocktail sauce until ready to use.
Serve cocktail sauce with cooked trout and lemon wedges ... Make about 1 1/2 cups.
What a little hotter sauce? just a more horseradish and Tabasco sauce.
Serving Portions For hors d'oeuvres
When it comes to estimating quantities of hors d'oeuvres for gatherings keep these guidelines in mind.
A general rule of thumb, assume that most guest will consume eight to ten bite size pieces for every 60 to 90 minutes of a party. If you are serving a variety of hors d'oeuvres, be to have enough so that everyone can sample at least one of each item.
For an average size party (8 to 20 guest), count on two to three types each of hot and cold d'oeuvres, or five to six selections in all.
