White River Fishing Report...
Since 1995 - For Twelve Years !!

Feb 23, 2007 - Mar 9, 2007

High water and shad are coming through, it has been a EXCELLENT time of trophy fishing. Many Browns being caught in the 2 to 4 lb class and larger ... 10lb Browns have been some what common. This is the first shad "run" we have had in four or five years.

Most Browns are being caught on #9 and #7 Countdown Rapalas, 1/8 oz White Jigs, Silver Rogues and Spoons.

Water generation has been running around the clock, with 6 to 7 units running full time.

Power Eggs in Yellow and White with Glo-worms are still catching plenty of Rainbows. The Gold Cleo Spoons and Buoyant Spoons will catch Rainbows too.

Fly Fishing on this high water will probably be best with Red San Juan Worms, White Wooly Buggers, White Shad Flies and Egg Patterns in Yellow, Peach and Red.

The Rainbows are hitting White/Chartreuse and yellow powerbait. Other baits that are working on the Rainbows are White Worms, or Gold Cleos and Buoyant Spoons.

Fly Fisherman are using Egg Patterns, Wooly Buggers, and Red San Juan Worms can help weigh down a stringer.

To all fisherman, have fun, good luck and be careful on this beautiful White River!

Catch and Release is now open below Bull Shoals.

Good luck with your fishing and take a buddy along to enjoy fishing also
and to make memories of a life time.

Hollandaise Trout

Serves: 6

Ingredients

1.5 pound trout filets
Cut fillets into serving-size portions.
Steam over salted water for 9-10 minute or until fish flakes when tested with a fork.
Remove from heat.
Carefully remove fish to heated platter and keep hot.

hollandaise sauce
2 tablespoons water
6 slightly crushed peppercorns
1 tablespoon white wine vinegar
2 egg yolks
3/4 cup butter
salt to taste
1 tablespoon lemon juice

Directions

Make the sauce in a double boiler or an oven-proof bowl over a saucepan of hot water.
If using the latter method make sure that the bottom of the bowl is not touching the hot water or the sauce will set on the bottom of the bowl before it is cooked.

Place the water, crushed peppercorns and white wine vinegar in a small saucepan and reduce to about 1 tablespoon of liquid. Set aside. Cut the butter into pieces and soften gently in a small saucepan. Remove from heat.

Whisk the egg yolks, reduced liquid and a little of the butter in the double boiler. When the mixture becomes creamy and slightly thick, pour in the butter in a thin stream, whisking briskly. Add lemon juice and a little salt, and taste for seasoning. Remove from the heat immediately when it is thick.

Should the sauce look as if it is curdling, add a few drops of cold water and whisk briskly for a few more minutes. This sauce can be made in a blender or food processor, but you may find that less butter will be absorbed. The addition of 1 tablespoon of cold water with the lemon juice will prevent it becoming too thick.

Pour the sauce over the filets and serve.

"Finish every day and be done with it.
You have done what you could;
Some blunders and absurdities crept in;
Forget them as soon as you can.

Tomorrow is a new day;
You shall begin it serenely and
With too high a spirit to be encumbered
With your old nonsense."
