With all the rain we had a few weeks ago and the snow and rain in Missouri, we have seen a substantial increase in water generation. We have seen anywhere from 3 to 7 generators being turned on almost every morning. Lake levels are above power pool. This is great news for the rivers and lakes. FISH LIKE WATER!
We are having quite a few fisherman showing up now. Guests are catching most of their bigger fish on White Jigs (1/8 oz), #9 Silver Countdown Rapalas, Silver Rogues and White or Silver Krocodile Spoons.
For bait fisherman, White, Yellow and Rainbow colored Power Eggs tipped with a Glo Worm will be hard to beat!
Fly Fishing during early hours on this higher water is best with White or Pink Jigs (1/32 oz or 1/64 oz). Also Egg Patterns and San Juan Worms are working well. Late afternoons they have been turning off the water so wade fisherman will still have an opportunity to fish toward the evenings. However, remember to always be careful and check with the Dams and keep an eye on a spot along the bank so you can tell when the water does start coming up.
November 1st to February 1st a 3/4 mile section of the White River is close for
Brown Trout spawning, from Bull Shoals Dam down to the wing dike (barrier next to Bull Shoals White River State Park Trout Dock).

November through March offer some of the best lunker trout
catches of all
seasons, however, fishing is good all year as the water temperature remains
an approximate 50 degrees throughout the year.

Trout Recipes

Serves:
4
Ingredients
4 trout filets 6-8
ounces each
2 small zucchini
lemon juice
Steaming liquid: Easy
court bouillon. Makes 6-7 cups
4 bottles (8 oz) of clam juices
4 cups water
2 cups dry white wine
2 carrots cut in 1" pcs
1 onion peeled and cut in half
3 parsley sprigs
1 thinly sliced lemon
pinch of dill seed
1 celery stalk cut in 1" pieces
Sauce: Hazelnut
dressing Makes 1 cup
1 cup hazelnut oil
bunch of fresh chives
1/2 cup hazelnuts
juice of one lemon
Directions
Place the fillets on a rack to
be steamed. Cut the zucchini in to matchstick pieces and sprinkle with a little
lemon juice.
Place the zucchini on top of the trout fillets.
Steam over court
bouillon for 8-10 minutes or until the fish flakes easily.
Remove the trout,
arrange on a platter and top with the hazelnut dressing.
Steaming liquid:
Combine liquid in a 4-5 quart sauce pan.
Bring to a boil then
reduce heat.
Simmer uncovered until
the liquid has been reduced by 1/3.
Strain through a
cheesecloth.
Use 1-2 cups to steam
the trout.
Store the remainder in
the freezer.
Sauce: Snip the chives
into small pieces and place in a blender with the hazelnuts.
Add the lemon juice and
the hazelnut oil then mix well. Serve with a crisp green salad, boiled new
potatoes, glazed carrots and fresh caraway rye bread.

Catch-n-Release
Use
barbless hooks.
Land the fish as quickly as possible.
When unhooking the fish, keep it in the water as long as possible.
Wet your hands before you touch the fish.
Don't squeeze the fish or stick your fingers in its gills.
Cut the line if the fish has swallowed the hook.
